When the first fully developed, yet unripe peppercorns turn from dark green to yellow, the pepper drupes are manually harvested. Through a skillful blanching and drying process, the skin wrinkles and turns into a uniform dark brown. Well-shaped peppercorns of a uniform color introduce a pepper of great personality: A floral aroma anticipates a well-defined yet mild pungency which comes with notes of mint, eucalyptus, some leather and a pinch of saltiness.
